La Guacamole è una famosa salsa messicana a base di purea di avocado. In Messico questo condimento viene gustato come antipasto insieme al pane o a prodotti tipici del luogo, ma è ottimo anche per accompagnare secondi piatti di pesce o di carne come un saporito Filetto al Pepe Verde

Questa salsa di accompagnamento viene servita solitamente con delle tortilla chips o altri piatti della cucina messicana, accompagnati a fine serata da un perfetto tequila sunrise. Il nome Guacamole, deriva dall’unione delle parole Avocado e Salsa, in lingua azteca, infatti l’origine di questa ricetta è antichissima e risale proprio all’epoca degli aztechi.

Salsa verde:

La salsa verde è originaria del Piemonte, ma viene preparata in tutta Italia perchè è perfetta per accompagnare i lessi, come appunto il bollito alla piemontese e gli ingredienti principali sono acciughe, aglio, capperi, pane, prezzemolo e uova.

Salsa tonnata:

La salsa tonnata è perfetta per accompagnare sia primi che secondi piatti, a seconda dei gusti. Anche questa salsa è tipica del Piemonte perchè deriva dalla portata principale del Vitello Tonnato, composta principalmente da acciughe, aglio, alloro, capperi, tonno e uova.

Salsa rosa:

Conosciuta anche come salsa cocktail, la salsa rosa accompagna solitamente piatti di pesce e crostacei, famosi i gamberetti in salsa rosa, ma anche insalate e crostini.

Come preparare Guacamole Messicana

Fate un trito di aglio, cipolla e peperoncino ed unitelo alla purea insieme ai pomodori tagliati a cubetti, al succo e alla scorza tritata di 1 lime, il cumino, il coriandolo, al sale e al pepe.
Lavate gli Avocado, privateli della buccia e del nocciolo, tagliateli in piccoli cubetti e ponete una metà in un recipiente, mentre conservate l’altra metà. Con una forchetta riducete in purea i cubettini di avocado nel recipiente.
Condite la vostra salsa con olio d’oliva e con i cubetti di avocado rimasti interi. Lasciatelo riposare per mezz’ora prima di servirlo.
