La purea di patate (o purè di patate) è una ricetta buonissima che è amata da grandi e piccini.

E’ un contorno semplicissimo e dal gusto delicato, ottimo per accompagnare piatti di carne sia molto elaborati che cotti alla griglia o al vapore. La purea deve essere cremosa e della giusta densità e non presentare grumi. La scelta delle patate è molto importante: le migliori sono quelle più vecchie e a pasta bianca in quanto sono più farinose e ricche di amido.

Come preparare Purea di patate

Lavare le patate e metterle in una pentola con abbondante acqua fredda. Accendere il fuoco e quando bolle, calcolare circa 30/35 minuti di cottura (il tempo varia a seconda della grandezza delle patate).Scolarle, sbucciarle e passarle nello schiacciapatate ancora calde in modo che non si formino grumi. Per facilitarsi il compito utilizzare guanti e coltello per evitare di scottarsi.

Mettere il passato di patate in una casseruola e accendere il fuoco a fiamma bassa.Versare il latte caldo poco alla volta e farlo amalgamare mescolando in continuazione in modo da ottenere un composto liscio, cremoso ed omogeneo.Unire il burro a pezzettini e farlo incorporare alle patate continuando a mescolare con un cucchiaio di legno fino a che non si sia fuso del tutto.

Salare a piacere ed infine aggiungere il parmigiano grattugiato, far mantecare per un minuto sempre mescolando e poi spegnere il fuoco.Impiattare e servire subito in tavola ben caldo.
