Zucca gratinata al forno: visto che siamo in autunno, la zucca è un ortaggio decisamente di stagione. E’ di sicuro un ingrediente versatile, adatto ad ogni tipo di preparazione, dall’antipasto al dolce. Vediamo come preparare un antipasto o un secondo facilissimo.

La zucca gratinata al forno è uno dei piatti più gustosi e altrettanto facili da preparare. L’importante – e bisogna dire che non è una cosa scontata – è trovare la zucca giusta.

Come sappiamo, ne esistono di diversi tipi: la più famosa è sicuramente la Mantovana, dalla buccia verde e dall’interno giallo/arancione. E’ adatta a tanti piatti, sia come ripieno per esempio dei ravioli, sia come elemento dell’omonima torta. Un’altra molto conosciuta è zucca Berrettina piacentina: ha una polpa soda adatta alla preparazione di tortelli, risotti o al forno.  Un’altra ancora diffusa è la Butternut utilizzata nei paesi anglosassoni –  mentre in Italia è piuttosto diffusa nella variazione Violina, molto dolce adatta alle minestre, alle zuppe e alle vellutate, perché ha una consistenza cremosa.

Per la zucca gratinata al forno servirà:
– una zucca Mantovana o Berrettina
– pangrattato
– timo e rosmarino
– olio
– sale
– pepe

Tagliamo la zucca, togliamo i semi (questi non buttiamoli assolutamente, possono servirci ancora nella cucina del riciclo) e i filamenti. Sbucciamola e tagliamola a tocchetti, dopodiché mettiamola in una ciotola capiente con sale, olio, timo e rosmarino. Mescoliamo il tutto e spolverizziamo con abbondante pan grattato. Versiamo il composto in una pirofila unta d’olio. Aggiungiamo ancora un po’ di olio per aiutare a formare la crosticina in cottura.
Mettiamo a cuocere in forno già caldo a 200° per 20 minuti o fino a che appunto non si sarà formata una crosticina dorata. Per una variante ancora più ricca, prima della cottura si può aggiungere del formaggio a pasta filata, come il provolone o il caciocavallo. Servite caldissima con una spolverata di pepe.
