Apple pie: la ricetta originale della torta di mele all’americana

L’apple pie è una ricetta strettamente legata agli Stati Uniti, soprattutto in questa versione: ecco la ricetta originale americana.

Al nome “apple pie” l’immaginario collettivo va subito alle torte di mele fumanti sui davanzali delle finestre delle casette nella provincia americana profonda. Un dolce cremoso e super gustoso che ha poco a che fare con la nostra classica torta di mele, anche nella preparazione. Ma come preparare allora la famosa torta di Nonna Papera che tanto abbiamo sognato da bambini? Ecco la ricetta originale americana, facile e veloce per un apple pie che scalderà il cuore di tutti.

Ingredienti per la pasta

320gr farina
225 burro
1 cucchiaino di sale
1 cucchiaino di zucchero
100ml acqua ghiacciata

Ingredienti per il ripieno

1kg mele Granny Smith
100gr zucchero di canna
1 cucchiai di farina 00
50gr di burro fuso
5 cucchiaini di cannella
1 cucchiaio di succo di limone
buccia di 1\2 limone grattugiata
1\2 cucchiaino di zenzero
1\2 cucchiaino di sale

Procedimento

Perché le Granny Smith? Il loro sapore leggermente aspro e la loro consistenza le rendono le mele perfette per la nostra apple pie all’americana. Ma partiamo dalla paste brisé: mescolate insieme burro, farina, sale, zucchero e aggiungete man mano l’acqua ghiacciata, amalgamando tutto insieme. La consistenza dovrà essere sabbiosa. Formate una palla e lasciate riposare per 30 minuti in frigorifero e nel frattempo dedicatevi al ripieno.

Preparate le mele, lavatele, asciugatele e tagliatele a dadini. Aggiungete succo e scorza di limone e mescolate. Alla fine aggiungete anche zenzero e cannella e continuate a mescolare. Per ultimi zucchero e burro e lasciate marinare per almeno 10 minuti. Quando l’impasto sarà freddo, dividetelo in due parti: una sarà la base e una la copertura.

Stendetene una metà con un mattarello e inseritela in uno stampo imburrato per bene. Fate dei fori sul fondo con una forchetta e aggiungete il ripieno di mele. Disponete le mele più al centro e in altezza, in modo da formare la caratteristca “bombatura” al centro. Coprite con l’altra metà e create il famoso bordo smerigliato. Infornate a 175° per 40 minuti circa, dopo aver lasciate riposare la torta in frigo almeno un’ora.
