Una delle tradizioni a Genova è, senza dubbio, quella di gustare il pesto in tutte le sfumature. Gli ingredienti principali, come riporta il Pesto World Championship, sono il basilico genovese Dop, pinoli italiani, parmigiano reggiano stravecchio, pecorino sardo, aglio di Vessalico (Imperia), sale marino grosso, olio extravergine di oliva della “Riviera Ligure” Dop. La ricetta, poi, è molto varia rispetto alle tradizioni che risalgono anche ai tempi dei romani.

Il primo accenno della salsa è stato il gastronomo Giovanni Battista Ratto nella sua opera del 1836, La Cuciniera genovese, dove menziona la maggiorana e il prezzemolo, formaggio olandese e burro. Successivamente quest’ultimo è stato eliminato dalle varie ricette con il pesto genovese che potrebbe essere anche riconosciuto come patrimonio dell’Unesco.

Il primo posto in cui mangiare il pesto a Genova è Il Genovese di Roberto Panizza, presidente dell’Associazione Palatifini, ideatrice e promotrice del Campionato mondiale di pesto al mortaio. Non sono con la pasta o come minestrone, ma qui il pesto si può gustare spalmato direttamente sul pane. Così appena si entra, il cliente può assaggiarlo in un mortaio di marmo. Successivamente si può andare alla Trattoria Rosmarino, a due passi da piazza De Ferrari, da Alessandro Massone e Felice Zingarelli, dove si può assaggiare la tipica cucina genovese. Si possono trovare ingredienti di qualità e di stagione: qui il pesto ha un colore molto intenso così come il suo profumo, anche se non viene utilizzato il mortaio. Inoltre, proviene da un’azienda Celle Ligure, gli altri ingredienti sono il pecorino sardo, il parmigiano di 36 mesi, l’aglio di Vessalico, pinoli italiani, olio della riviera ligure e sale grosso.

In pochi anni è diventato protagonista nella guida Ristoranti d’Italia del Gambero Rosso con lo chef giovanissimo Simone Vesuviano. Il pesto non viene utilizzato soltanto per condire le trofie, ma c’è tanta creazione ed inventiva come gli gnocchi alla romana o i fiori di zucca ripieni.

Alla Trattoria da Ugo è come si andasse a mangiare a casa con un ambiente molto familiare. Molto facile da raggiungere, a pochi passi dal Duomo e anche molto vicino Porto Antico. Qui è possibile assaggiare piatti caratteristici, come la trippa alla genovese, il minestrone, le acciughe ripiene, la frittura di pesce o le seppie alla Ugo. Il pesto è l’elemento indispensabile, insieme alle fettuccine verdi a base di spinaci o alle classiche trofie, servite entrambe con patate e fagiolini.
