Uno degli artisti più celebri in Italia per il panettone: Ernst Knam si è lasciato andare svelando tutti i suoi segreti per quanto riguarda le sue invenzioni. Ai microfoni de “La Gazzetta” ha raccontato: “Lavoriamo tantissimo in questo periodo dell’anno: vogliamo che sulle tavole degli italiani arrivino i migliori panettoni. Il panettone è la tradizione antica del Natale ed io lo propongo in forma tradizionale classico per poi declinare i lievitati che dalla classica ricetta trovano una nuova evoluzione creativa”.

Così ha aggiunto tutte le novità per quanto riguarda le sue creature: “C’è la Tris Viaggiatore con tre cioccolati al suo interno, pere semicandite e una croccante glassa di cioccolato fondente cosparsa di grue di cacao. Per i più piccoli ogni anno creiamo il pandoro, e non manca mai il Knamettone, solo trecento pezzi numerati, unici. Quest’anno il Knamettone sarà la Foresta Nera, un lievitato con amarene marinate 48 ore nel Kirsch e una copertura di cioccolato fondente e grue di cacao sabbiato”.

Un racconto dettagliato per quanto riguarda tutte le sue opere in cucina: “Nel ricordo della tradizione tedesca preparo anche per questo tempo il Christstollen: un tipico dolce natalizio che risale al 1329, dopo la cottura il dolce non viene consumato subito, ma si mangia dopo circa tre settimane quando le spezie, uvetta, arancia candita, mandorle, marzapane e limone, iniziano ad insaporirlo”.

Successivamente il noto pasticcere ha rivelato novità importanti in ottica futura: “Sono un tradizionalista. Per me il panettone esprime il cuore delle feste natalizie ecco perché il primo panettone è sfornato il 30 di Novembre e a Natale finisce, sono contrario al panettone tutto l’anno, questo dolce è cultura è la storia della tradizione. Ogni persona può prenotare il panettone o le sue declinazioni in lievitati fino al 15 Dicembre anche online per chi si trova lontano dalla nostra sede milanese”.

Successivamente ha rivelato le sue tradizioni: “A Natale ci saranno molti dolci unici e dedicati ad ogni gusto. Poi ci sono mousse, mini sculture e i nostri storici panettoni gastronomici salati: quello blu dedicato al mare con sei gusti diversi, il panettone rosso per chi ama la carne e il panettone verde per chi è vegetariano. Salatini, e su richiesta creiamo menù speciali personalizzati”.

Infine, ha rivelato: “Ci sono molte novità: fino a maggio siamo in tv nella nostra Dolceria, nella mitica piazza de I Fatti vostri; fino al 17 Dicembre mi vedrete nelle vesti di giudice di Bake Off e subito a seguire fino a Gennaio sarò protagonista del programma Dolce sotto un tetto e molto altro del quale non vi svelo ancora i dettagli.”
