Giardiniera fatta in casa: ricetta facilissima ed economica

Dovete condire un’insalata di riso o una pasta fredda ma non volete i soliti wurstel e uova sode? La giardiniera può fare al caso vostro e dare quel pizzico di diversità in più e rendere i vostri piatti freschi, leggeri ma super gustosi. La ricetta per una perfetta giardiniera fatta in casa è così semplice ed economica che potete farla e rifarla tutte le volte che volete e usarla anche per antipasti, per condire un’insalata russa sotto Natale o semplicemente per un aperitivo sfizioso dal gusto piacevolmente agrodolce. Ecco la ricetta più semplice e veloce che potete trovare!

Ingredienti

750gr verdura mista (preferibilmente cavolfiore, sedano, carote e cipolline)
125gr peperone rosso
500ml vino bianco
110gr zucchero bianco o di canna
125gr peperone gialle
500ml aceto di vino bianco
100ml olio d’oliva
60gr sale grosso

Procedimento

Occupatevi delle vostre verdure miste: eliminate il gambo e le foglie del cavolfiore, tagliate le cime e lavatele per bene sotto l’acqua fresca. Le cipolline andranno pelate e lavate e la stessa cosa con le carote: potete sbucciarle con un pelacarote o grattare la “buccia” con un coltello. Anche il sedano andrà lavato per bene, soprattutto il gambo , mentre per quanto riguarda i peperoni dovrete tagliarli, eliminare i semini e i filamenti bianchi e lavarli bene.

Quando la vostra verdura sarà ben lavata, asciugatela e tagliatela a dadini piccoli ma non troppo. Prendete una pentola capiente e mettete dentro aceto, vino, olio, zucchero e sale. Mettete sul fuoco e portate a bollore fino a quando il liquido non sarà pronto. A questo punto aggiungete pure le verdure e fatele cuocere da cinque a dieci minuti a seconda della consistenza che volete dare alla vostra giardiniera.

5 minuti se volete una giardiniera croccante, 10 se la preferite morbida. A questo punto dovrete scolare le verdure laciando un po’ di liquido di cottura et voilà! Mettete in una ciotolina da portata o utilizzatela come più vi piace. Potete servirla calda o fredda e sarà buonissima comunque.
