Un cracker non è altro che un biscotto, salato, composto da una sfoglia molto sottile e croccante. Nato nel lontano 1801 da Josiah Bent, prese il nome dal termine inglese crackling”, attribuito allo scricchiolio prodotto in fase di cottura. Proprio in questo step, i fori in superficie sono essenziali.

Ecco perche i cracker hanno tutti quei buchi

I buchi dei cracker sono anche chiamati “buchi di attracco” (ovvero docking holes), vengono creati nel momento in cui si stende l’impasto e non sono messi lì a caso, ma svolgono un compito essenziale: servono ad evitare che durante la cottura si formino grandi bolle d’aria che farebbero gonfiare il cracker, impedendo all’impasto di restare piatto e sottilissimo come dev’essere. Grazie ai buchi il vapore esce durante la cottura e l’impasto non si gonfia.
In poche parole, senza questi fori i cracker non sarebbero più cracker, ma un’altra cosa (sarebbero probabilmente molto simili a grandi biscotti), perché la sfoglia sottilissima è una caratteristica fondamentale di questo snack. Il modo in cui sono posizionati i buchini e la loro quantità va a determinare anche la consistenza finale del cracker, più sono ravvicinati e più lo snack sarà croccante perchè uscirà parecchio vapore e ciò fa indurire l’impasto.
