Hai voglia di un buon supplì al telefono a Roma? Ecco dove devi andare

Supplì: fritto, croccante, con la mozzarella filante e da mangiare rigorosamente con le mani. Il supplì è una vera istituzione romana.

Il supplì è un assoluto protagonista dello street food della capitale, perfetto per una goduriosa merenda, per un pranzo veloce o per iniziare con il piede giusto la cena in pizzeria. A quanto pare, un soldato francese, trovatosi a passeggiare per le vie di Roma, gustando la polpetta di riso appena fritta, definì la mozzarella nascosta al suo interno una vera e propria surprise, una sorpresa. Il termine, italianizzato, si trasformò successivamente in supplì.

Imprescindibile per un vero supplì romano è il fatto che sia “al telefono”, cioè che una volta diviso in due la mozzarella filante congiunga le metà spezzate come il filo del telefono unisce due cornette.

  • Antico Forno Roscioli

Scamorza leggermente affumicata, pomodoro campano pelato, riso Roma tradizionale: questi gli ingredienti del supplì tradizionale dell’Antico Forno Roscioli. Il supplì ha una doppia panatura: la prima realizzata con pangrattato di rosette, la seconda con briciole di pane  tipo lariano, rustico e a pasta acida. I supplì classici costano 1,50€, mentre gli speciali costano 2€: da provare quello cacio e pepe e quello ai carciofi.

A Trastevere il paradiso del cibo d’asporto si chiama proprio “Supplì”: un locale piccolissimo aperto dal 1979, che prepara circa 800 supplì al giorno, fino ad arrivare a 1000 nei weekend. Molto buona la selezione degli ingredienti, come il pomodoro San Marzano dop, il pecorino romano dop, e il riso Goio 1929 dop. Oltre al supplì classico (1,50€), sono da provare anche quello cacio e pepe, carbonaro, amatriciano e quello al sugo di coda (2€).

Un’altra istituzione a Roma è Gabriele Bonci: una certezza non solo per la pizza al taglio, ma anche per i fritti. Da Pizzarium, al Panificio e sul bancone ci sono i supplì classici (1,50€), preparati con il pomodoro casalingo, mozzarella, parmigiano reggiano e basilico e quelli al ragù (2€), con pomodoro, mozzarella, parmigiano reggiano, carne macinata e salsiccia. Per entrambi il riso è quello di Riso Buono. E il fritto ovviamente è una cosa seria: mozzarella in carrozza con ‘nduja, spaghetti alla carbonara, pappardelle al ragù di pecora e ziti alla genovese.

La casa del supplì

Si tratta di una affollatissima pizzeria a taglio, rosticceria che sforna continuamente pizze, calzoni, primi e secondi piatti espressi. Il supplì è la specialità della casa: morbido, fragrante, con panatura leggera e non unta. Riso ben imbevuto di ragù con al centro un cuore di fiordilatte vero. Insomma una volta nella vita va assaggiato.
